- Choose local & seasonal
Seasonal produce is a treat in itself. It is fresher, tastier and often easier on your wallet. Think of asparagus in spring, strawberries in summer or pumpkin in autumn. By cooking locally and seasonally, you not only reduce your ecological footprint, but you also taste the best the season has to offer. - Use everything
A lot of flavour and nutritional value is lost because we throw away parts of ingredients. That’s a shame, because it’s precisely those “forgotten bits” that can be used to make surprising dishes.
